Bananas raspberry cupcake
Every Wednesday we pretend it´s Saturday. It´s a tradition well worth trying. Bananas raspberry cupcakes are the perfect healthy mid-week-treat!

What you need
250 g flour
100 g oats
1 ts baking soda
200 g sugar
1 ts vanilla sugar or essence
150 ml sunflower oil
150 ml vanilla yoghurt
2 eggs
400 g frozen raspberries
3 bananas
How we did it
Preheat oven to 200 degrees celcius. Line up a muffin tin with paper bake cups.
Put the dry ingredients in a bowl.
Mix oil, eggs and yoghurt in a small bowl and stir.
Pour the mixture into the dry ingredients. Stir.
Mash the bananas and mix them into the batter.
In the end carefully blend the raspberries into the batter.
Fill bake cups so they´re almost full.
Bake in the middle of the oven for 20-25 minutes.
If you want to, you can make a helthy topping of vanilla yoghurt and powdered sugar.
