Forest muffins

These muffins goes great with fresh air - we took them out into the forest! If you don´t have all the different types of flour, just use approximatly the same weight in what you have. Fill them with spekeskinke after they have cooled off.

The dry:
100 g whole wheat flour
100 g rye flour
200 g white wheat flour
2 teaspoons baking soda
1/2 teaspoon salt
1 teaspoon paprikapowder
1 teaspoon oregano

The wet:
3 eggs
3/4 cup oliveoil or rape seed oil
3/4 cup low fat milk

200 g cheddar cheese
Spekeskinke (Optional)

Preheat owen to 400 fahrenheit. Mix the dry ingredients in one bowl and the wet in another. Cut most of the cheddar cheese into small cubes, but save a little and grate it. Mix everything lighthanded. Fill your muffin cups (12 large) and sprinkle with the grated cheddar. Bake for 15 minutes. Garnish with fresh oregano and serve with blueberry juice.
