Red currant surprise

We made some muffins with red currants last year too, but wanted to perfect them this year. We made them with a surprise, which not surprisingly was, you guessed it, the red currants.

8 muffins:

Batter
1 egg
100 ml sugar
300 ml flour
2 ts baking powder
1 ts vanilla sugar
100 ml milk
100 ml oil
a hint of salt

Filling:
100 ml custard
50 ml red currants

Put the oven on 200 degrees Celsius.
Line a tray with paper bake cups.
Mix the batter. Stir the red currants carefully into the custard.
Fill the paper cups 1/4 with batter. Add a full tablespoon of custard/red currants. Cover the custard with the rest of the batter.
Bake for about 20 minutes.
