Rhubarb cupcakes beyond

The Knitting Club Spook was served these delicious cupcake last time we met up. There were only a couple of crumbles left when they packed their needles for the night. So hurry up and make some lovely Rhubarb cupcakes beyond!

Batter
5 dl flour
2 dl sugar
1 ts vanilla sugar
2 ts baking soda
3 eggs
2 dl milk
1/5 dl oil, sunflower or other

Stuffing
5 dl custard
300 g vanilla quark

Rhubarb mixture
3 large stems of rhubarb
1/2 dl sugar
1 ts vanilla sugar
2 tbs potato flour

Topping
2 dl chopped almonds
2 dl oats
100 g melted butter
1/2 dl sugar
1/2 ts cinnamon

Put the oven on 200 degrees celcius.
Mix the dry ingredients for the bater in one bowl and the other in another. Mix the two together.

Mix the custard and the quark in another bowl.

Cut the rhubarb  in three along the long side. Chop it in 1/2 cm-1 cm thick pieces. Put it into a bowl and mix in the sugar, vanilla sugar and potato flour.

Mix all the ingredients for the topping in a final bowl.

Use small or large paper bake cups. We have tried both, and prefer the large ones, as it doesn´t get as messy as with the smaller ones.

Put 1 tbs batter in tthe bottom of the cup (for the small ones,double for the larger).
Put a bit less than 1 tbs custard/quark on top of the batter, before you lay a bit more than one tbs of rhubarb mixture on top. Finish off with soome topping.

Bake for abour 20 minutes. Make sure the cupcakes are golden and done inside before you take them out.

Sprinkle with powdered sugar and invite your friend over for your own Spook-session.
