Get some red currants from your garden and make these delicously refreshing cupcakes. We love red currant, and you will too once you taste these. Ohy, and the flowers in the photo are just for decoration, so don´t eat them;)
200 ml sugar
1 ts vanilla sugar
500 ml flour
1 ts baking soda
100 ml milk
500 ml custard
300 g vanilla quark
600 ml red currants
How we did it
Put the oven on 200 degrees Celsius.
Line a tray with paper bake cups.
Beat egg and sugar.
Mix the rest of the dry ingredients and add them to the beaten eggs.
Pour in the milk carefully while stirring.Mix the quark, the custard and the red currants in a different bowl.
Fill the bake cups with equal amount of the batter and the red currant-mix. Start by putting the batter in, then top it with the red currant-mix. Stir a couple of times in each cup with a thin stick.
Bake for 20 minutes.
