Looking good and tasting great – you really can´t go wrong with these cheesecake cupcakes!
100 g butter
Chocolate chip cookies, 200 g
2 Philadelphia cheese
1 dl sugar
20 strawberries, frozen or fresh
4 dl creme fraiche
1 dl powdered sugar
1 ts vanilla sugar
100 g chocolate
½-1 dl coffee
2 table spoons creme fraiche
How we did it
Preheat oven to 200 degrees celcius. Line up a muffin tin with paper bake cups.
Blend butter and cookies in a blender until they’re chunky. Put the batter into the paper cups.
Bake for 10 minutes.
In the meantime you can mix the cheese and the eggs. Blend the strawberries and the sugar. Mix the two batters. Put the batter into the 12 paper cups.
Bake for about 30 minutes on 180 Celsius.
Cool the cupcakes.
Mix creme fraiche, powdered sugar and vanilla sugar. Pour the mix into the paper cups.
Bake for 8-10 minutes on 180 Celsius.
Melt chocolate, coffee and creme fraiche on low heat. Serve the cheesecake cupcakes with a nice chocolate frosting!
